Make your own Homemade Refried Beans!

I can't tell you how many times I've waited too long to make dinner and have had to resort to using canned refried beans.  I know... I should be super mom and totally prepared with awesome meals everyday but someday's I run out of time (and energy) and just need something quick and easy to make that still tastes like I slaved over it all day.

That's why I love this easy refried beans recipe that I found over at Money Saving Mom.  She gives you the instructions on how to prepare this recipe if you are using dry beans.... but then she also let's you off the hook and says you can use canned whole pinto beans!  That's my kind of girl right there.  She understands that I needed my refried beans to be quick and easy.  And the best part is that canned whole pinto beans don't have lard in them so it is a healthier alternative to using canned refried beans.

Make your own Homemade Refried Beans Ingredients

2 cans of whole pinto beans 
1/2 large yellow onion, chopped
1 tablespoon minced garlic
1 tablespoon canned green chilies
1/4 teaspoon cumin
1/4 teaspoon mexican chipotle chilie powder
1-2 tablespoons milk
1 tablespoon salsa

Directions
Bring beans (in their own liquid) along with the cumin & mexican chipotle powder to a boil in a medium sauce pan and let cook for about 5 minutes.  

While you're beans are cooking add your butter, minced garlic, green chilies and chopped onion to a medium saute pan and let cook over medium heat for about 5-7 minutes, or until tender and translucent. 

Spoon out your beans using a slotted spoon and put them into a medium mixing bowl.  Add your onion mixture, milk & salsa to the bowl.  You can use either a potato masher or I prefer to use an immersion blender to get them really mashed and mixed well.  

Add more milk if you want a thinner consistency, but only add it a little at a time.  

This is a refried beans recipe without the "refry".  I just think it's a little healthier that way.  I hate how much oils and such we already get throughout the day and anywhere I can save and cut it out makes me happy!
