Creamy Tomato Tortellini Skillet



I didn't know that making homemade pasta sauce was so darn easy.

Why didn't I know this?  I have been stuck in a spaghetti sauce rut for my entire life and nobody even told me.  Darn grocery stores with their bottled sauces.

When I came across this recipe over at Semi Homemade Mom over the weekend I didn't know if my family would go for a homemade creamy tomato sauce with spinach in it.  We're a Pizzetti kind of family and I was pretty sure that if I told them what I was planning on making they would protest.  

So what did I do?  I printed the recipe and decided that we were going to try it no matter how much protesting happened.  It's was cracking me up how they kept asking me what I was making for dinner and I just kept telling them that it was Tortellini Surprise!  Score one for the sneaky mom... protest avoided :)

I'm glad I made the decision to make this recipe because we finished every last bit of it and it was really good.  Everyone decided that it was a keeper and we would definitely make this for dinner again sometime soon!

 
Creamy Tomato Tortellini Skillet Ingredients
16 oz package fresh cheese tortellini
15 oz can Italian stewed tomatoes (I used the sliced roma style with Oregano & Basil)
2 cups fresh spinach, chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic salt
1/4 teaspoon Italian seasoning
2 cloves minced garlic
3/4 cup milk
3/4 cup heavy cream
2 tablespoons flour
1/3 cup grated Parmesan cheese
1/3 cup grated mozzarella cheese (optional... see Shauna's Tips below)

Directions
Prepare tortellini per package directions.

In a medium mixing bowl combine your milk, heavy cream and flour.  Whisk together and set aside.  

In a large skillet combine the diced tomatoes (with sauce), minced garlic, spinach, salt, pepper, onion powder, garlic salt, and Italian seasoning.  Heat over medium heat until mixtures just begins to boil.

Once mixture is begins to boil add the milk, cream & flour mixture and stir well.  Add your grated Parmesan cheese and cook until bubbling again.

Reduce heat and simmer for about 2-3 minutes allowing the sauce to thicken.

Add the cooked tortellini to the sauce mixture and stir to fully coat in all of your saucy goodness.

Shauna's Tips
I have 2 tips for this meal.  First... I chopped the tomatoes after I took them out of the can because they were on the larger size and I didn't think that would be good to have huge chunks of tomatoes.  

Second... We sprinkled a little bit of fresh grated mozzarella cheese on top and put our plates under the broiler until the cheese was all melty!  So good, so good!
