Ok, I admit it... sometimes I cheat.
Not in a bad way, like on a test or anything... I just cheat in the kitchen.
I have those days where I don't feel like cooking a big elaborate meal and I just want to be in and out with minimal dish clean up. Who's with me?
So that's why I love to make Tempura Battered Fish. Quick. Easy. And super yummy!
I feel kind of bad even posting this as a recipe. I didn't really do anything special and that's why I'm a big-recipe-cheater-pants today.
You'll forgive me, right?
Tempura Battered Fish Ingredients
3-4 thawed and patted dry fish of your choice [we used Hake tonight for this picture]
1 cup Kikkoman Tempura Batter Mix [Japanese Style Extra Crispy]
3/4 cup ice-cold water
vegetable oil
Directions
Pour enough oil to cover about 2 inches deep in your wide skillet. Heat oil between 350° - 360° F.
In a medium bowl, whisk together batter mix and water until blended. Set bowl into larger bowl filled with ice cubes to keep batter cold.
Pat seafood dry with paper towels Cook in small batches of 4 to 5 pieces, dipping 1 piece at a time into batter and carefully sliding into hot oil.
Deep fry 2-4 minutes until cooked and golden brown, turning pieces over once.
Remove fish from skillet and drain on paper towels.
Make sure to skim off cooked batter pieces from oil between batches or your oil will get all yuckie and start smelling burnt.

I keep it easy on Fish night! My family usually asks for a side of Mac & Cheese or fries with their fish. I usually opt for the fries so they can have Homemade Fish & Chips! How fun is that?

Shrimp, Fish Fillets [Tilapia, Hake, Cod, Calamari, Haddock, Halibut], Scallops, Asparagus, Bell Peppers, Broccoli, Cauliflower, Green Beans, Carrots, Eggplant, Potato, Yam, Zucchini & Onions.
