I have been so good this past week you guys!  Last weekend I searched for recipes I wanted to try, made a huge grocery list, went to the store and got everything on my list.  Then I proceeded to cook a new recipe every night for the last week with the exception of one night.  It rarely goes that smooth in our house.  

Something always comes up and I don't have time to make a big dinner.... or if I do make dinner then my photo's don't turn out great... or I'm too hungry to take photos and I dig right in.  

That's why I was happy that I had time to make this dinner, and that my photo's turned out good, and that I wasn't too hungry (well I was, but I restrained myself long enough to take pictures, lol!)  

So I've really been looking forward to trying this Chicken Marsala recipe from Pass The Sushi this week! I did tweak it just a little bit and it turned out to be so tasty!  Definitely making this one again for dinner :)

Mongolian Chicken

So I've been on a bit of a Chinese food kick for the past couple of days.  Friday we made Chinese Beef Brisket in the slow cooker and it was amazing!  Then Mexican Saturday night at our favorite restaurant and Chinese Mongolian Chicken for Sunday Dinner.  

And let me just read your mind really quick and answer the question that you're probably thinking to yourself... NO I'm not pregnant.   

Phew, now that you're not thinking about that anymore let's talk about how delicious this Mongolian Chicken  was :)

Chicken Cordon Blue Ranch Wraps

I came across a recipe recently for an awesome looking Chicken Cordon Blue Casserole from Tasty Kitchen that I keep wanting to make.  But without fail the couple of times I've planned on making it something came up and we had to change our dinner plans that day for whatever reason.

I don't know about you guys but sometimes the day gets away from me and it's too late to make a big dinner for everyone.  Or I'm too tired.  Or I just don't want to dirty the kitchen because that means that I have to clean it up later.

So that's why I decided to make these Chicken Cordon Blue Ranch Wraps instead.  I didn't have enough time to cook a casserole and everyone was ready for dinner, hungry and waiting on me.

Easy-peasy and not a lot of clean up!  Just the way I like it :)

Chicken Shepherds Pie

Sometimes I have to get a little creative when it comes to cooking for my family.

They have their favorites and it can be kind of hard to get them to try new stuff.  

That's what happened to me when I stumbled across a recipe from Simply Recipes for their Easy Shepherds Pie.  To say it was amazing is an understatement.  It is an out of this world Shepherds Pie.  Of course I tweaked it a little bit but really, it is to die for. 

But... I can only eat so much hamburger if you know what I mean?  Without fail if I ask my family what they would like for dinner one of them will respond with Shepherds Pie!  Welcome to my world. 

So I had to change it up a bit.  I kept the same basic ingredients but I just tweaked Simply Recipes Easy Shepherds Pie and turned it into a Chicken Shepherds Pie that is absolutely amazing. 

Don't take my word for it though.  This one you'll definitely want to try for yourself :)

{Mini} Chicken Pot Pies

I love easy.  I love quick.  I love food that tastes goood!

And that's why I LOVE these little {Mini} Chicken Pot Pies.

I was out cruising the blog scene last week when I came across a site called  Quick Dish by Tablespoon.  It's one of those sites that has a bunch of different bloggers pictures and recipes, and I  happened to stumble across one of it's submitted pictures while searching Google.

I found an amazing picture and recipe for {Mini} Chicken Pot Pies and of course I had to check out the food blog Bev Cooks that had submitted the post.  I really liked what I saw, so I thought I'd give these cute little Homemade {Mini} Chicken Pot Pies a go.

So glad I did!  They were FANTASTIC!  Such a good flavor and SO EASY to make.  Yeah, my family was impressed by them.

After a bad recipe fail this morning I needed a little ego booster and these worked like a charm :)  My family went on and on about them and how they'd love for me to make them again.

West African Chicken Peanut Stew

Chicken Tetrazzini

You guys, I was so excited this Sunday to try a few new recipes (yes, I said a few).  I figured I'd make something special for breakfast, I'd make a Valentines treat in the afternoon and a yummy and delicious supper.

Don't you love how you can plan till your blue in the face and nothing goes right and everything just starts falling apart, ugh.

I did make breakfast but we'll save that story for another time.  Let's just say the recipe didn't turn out that great and I'm gonna do some major tweaking this Saturday morning. 

I did end up making treats and almost burned the kitchen down in the process.  I was totally "in the zone" and focused on what I was doing.  I accidentally left our glass stove top burner on low and forgot about it.  I didn't notice that my hubby put the Chicken Tetrazzini with a hot pad on the burner till the hot pad was smoking and practically on fire.

That's about how my Sunday went.

How about you?  Any fun stories you can share?  It will make me feel better, like I'm less of a mess in my kitchen :)

Now let me tell you guys how good this casserole was.  It was definitely a 5 star recipe and that is hard to come by in this house.  We don't often give out a 5 star rating but this dish deserved it.  I have to thank Plain Chicken for posting this delicious goodness on her site.  I found it, pinned it, thought about it, tweaked it, made it, and loved it! 

It has minimal ingredients and came together pretty easily.  I wasn't thrilled about the cook time but it was worth the wait.  This is a must try you guys.  It was goooood!

What's better than a mexican casserole for dinner?  Nothing!  

You know what's even more exciting for me than a yummy mexican casserole? It's the fact that this is a family recipe that my mom sent to me.  I knew she had been making it for years but just hadn't gotten around to trying it since we live thousands of miles apart.  

Ok, I'm a dork.  

In the middle of my post I had to Google it and our cities are actually 833 miles apart.  It really does seem like thousands since I don't get to see her as often as I would like.  

Thank you mom, and thank you family for making this dish!  It is a definite keeper and will be oun our mexican food rotation for sure!

I love Bourbon Chicken, I have for quite some time now.  It started a long, long time ago when I worked retail management and would eat in the food court more often that I should have been.  I would always walk past the Japanese place that gave out free samples of their bourbon chicken regardless if that's what I was going to eat that day.  I just really love the stuff and it's definitely been way too long since I've had it.  That's why I was so exited when I came across a great looking recipe for it over at Jamie Cooks It Up. 

Usually Teryaki Chicken is the dish of request here in our house... until last night when I made Bourbon Chicken for the first time.  Saying that my family loved it would be an understatement.  I'm pretty sure that my daughter has asked me 3 times in the last 24 hours when I can make it again.  And she even had left overs for breakfast, lol!

This was actually a super easy dish to make, and I like it when things are easy to cook up!

After my family ate their Hawaiian Haystacks tonight I asked them to rate it on a scale of 1-5, with 5 being the best.  My husband who won't rate anything higher than a 4 gave it an immediate 5!  My daughter rated it at a 27.5, a little out of the rating scale and a friend of ours gave it a 5!

This is one of my top 10 favorite meals and I would eat it once a week if my family would let me.  I know it sounds simple.... Hawaiian Haystacks, but I bet you'll love it too if you try it!

I was on Pinterest a couple of days ago searching for new recipes to try and came across a "Cilantro Thai Chicken" recipe that looked interesting.  I knew my family would like it but there was just one problem.... I HATE cilantro.  I had to put that in caps because that's how strongly I dislike the stuff.  It smells terrible, then it gets on my hands after I handle it... gag!
But, being the great wife and mother that I am I decided to try this recipe anyways, even if it meant I would end up making something different for myself if I didn't like it.

Let me tell you, not many thing surprise me anymore but this recipe definitely did! I tweaked it a little bit from the original recipe and it turned out to be SO DELICIOUS!
