I haven't been making enough treats lately for my family. Partly because I am way tempted to devour all of them myself but also because I have been cooking so many other foods that I just haven't really thought about sweets much.
So when I came across a picture for Scotcharoo Cups over at Lil Luna I thought my family would like them. The only problem was that I didn't have any butterscotch in the house so I made mine coconut flavored. Oh boy, watch out! Between the peanut butter and coconut oil they are very delicious :)

Coconut Rolo Peanut Butter Krispy Treats Ingredients
3 cups rice krispies
1/2 cup peanut butter (we made ours peanut free and used Wowbutter Peanut Butter replacement)
1/2 cup light corn syrup
1/2 cup sugar
1/2 cup white chocolate chips
1 teaspoon coconut oil
1/2 cup chocolate chips
1 package of Rolos
Directions
Grease your muffin pans with a light coating of butter and set aside.
In a small sauce pan bring your peanut butter, sugar and corn syrup just barely to a boil over medium heat.
Place your rice krispies in a large mixing bowl and pour your peanut butter mixture right over the top. Stir well to incorporate all ingredients.
Spoon your krispy mixture into the muffin tins. Using the back of your spoon make an indent in the middle of each cup.
In a separate small glass bowl melt your white chocolate chips with the coconut oil in your microwave for 30 seconds. Take out and stir well. Put back in the microwave for an additional 25 seconds and all chocolate should be melted. Stir again and spoon into the indent of each treat.
Let cool for a few minutes and add your Rolos and chocolate chips.
Let chocolate cool completely while on counter or put in the fridge for a quick cool :)
This recipe made about 10 Coconut Rolo Peanut Butter Krispy Treats total.
