When she sent me her pictures I got really excited because my family LOVES potatoes and I think they will LOVE these Spicy Roast Potatoes! Now I can sit back and relax do everyone's laundry and pack :)

First a big thank you to Shauna for
allowing me to guest post here from the food blog Recipes From A Pantry.
I want to share with you my lazy day,
scrumptious and healthier spicy roast potatoes. They go with everything – from
a full roast dinner to grilled fish, haloumi, bean-burgers, or even just by
themselves.
This is a quick and easy dish to make – you
just have to remember to put them in the oven 30 mins before supper. As for the
ingredients – this recipe combination is just one way. What goes in depends on
what is in your pantry.

Bintu
Spicy Roast Potato Ingredients
3 large potatoes (about 600 g) serve 2-3
Salt to taste
¾ tsp smoked paprika
¼ tsp chilli flakes
1 tsp dried mixed herbs
2 tbsp olive oil
1 (bell) pepper chopped
1 onion chopped
1 tbsp chopped (coriander) optional
Directions
Pre heat oven to 400F/180C fan assisted/200
C/Gas 6
Cut the potatoes into bite sized cubes.
Season with salt, paprika, chilli flakes,
herbs and olive oil, mix well and bake for 10 mins.
Then remove the potatoes from oven, mix in
the pepper and onions, adjust salt.
Return the vegetables to the oven and bake
for up to 25 mins till the vegetables are done. Please stir the vegetables at
least once during baking so that they cook evenly on all sides.
When cooked take them out of the oven, stir
in coriander and serve..
Potatoes take a little bit longer to cook
than the other vegetable so I put them in first. If however you are short of
time, or you cut the potatoes particularly small then you can put everything in
at the same time. Your peppers and onions might be a little bit crunchy.
