Banana Apple Cinnamon Oat Bread

I'm not much of a bread maker for the most part.  I really don't enjoy kneading dough or waiting for it to rise so that's why I was so excited when I came across a recipe for some delicious little Apple Cinnamon Oatmeal Muffins from Cathlin Cooks that I thought might make a good bread... without the kneading or rising! 

Yep, this is my kind of bread!  It turned out so moist and delicious.  It was a little heavier and crumblier than I thought it would be but I'm sure it was because of the oat flour.  It is the first time I have baked with it and it turned out to be really delicious in this recipe!  What a great way to get more oats and coconut oil in your diet... just make yummy Banana Apple Cinnamon Oat Bread! 

The house smelled delicious while this bread was cooking!  I will definitely be making this again soon :)

Guest Post: Pink Monkey Smoothie



Can you believe that it's going to be Easter this weekend... and it's also going to be 60° outside in Utah?!?  That makes me SO happy!  I hate it when it's cold outside when we're Easter Egg Hunting.

English Muffin Breakfast Mini's



Do you guys like mini foods as much as I do?  Aren't they are fun to make and fun to eat!  Well, at least I think they are :)

That's why I whipped up a quick batch of English Muffin Breakfast Mini's this morning for my family.  I couldn't bring myself to make them another boring breakfast sandwich.  I mean, I am a food blogger.  I'm supposed to be creative, right?!?  

Only one problem.  If you've read my previous posts you'll know that the man of the house doesn't like raw eggs poured directly over bread and then baked in the oven.  So that's why my breakfast bakes are usually assembled and then just get their cheese melted at the end in the oven.  No soggy bread over here in this house thank you very much!

Now on to my exciting news....  I know that some of you have been noticing in my posts that I've been on an incredible weight loss journey and have lost 50 lbs so far!  It's amazing how different I feel and how much more I am enjoying my life, not only because I have more energy but I just feel happier from the inside out.  

That's why I've decided to become a Health Coach with the company that helped me to lose weight.  I couldn't have done so well on the program without the help of my personal coach and the best part for me is that my Health Coach was FREE TO ME and included with the cost of the program.

Mexican Fiesta Breakfast Burritos





Funny story about these Mexican Fiesta Breakfast Burritos....  they were actually supposed to be Mexican Fiesta Taquitos but I made them way too big like I always do and they became these huge monster burritos.  My family didn't complain though.  They ate them right up!

Chicken Cordon Blue Ranch Wraps



I came across a recipe recently for an awesome looking Chicken Cordon Blue Casserole from Tasty Kitchen that I keep wanting to make.  But without fail the couple of times I've planned on making it something came up and we had to change our dinner plans that day for whatever reason.

I don't know about you guys but sometimes the day gets away from me and it's too late to make a big dinner for everyone.  Or I'm too tired.  Or I just don't want to dirty the kitchen because that means that I have to clean it up later.

So that's why I decided to make these Chicken Cordon Blue Ranch Wraps instead.  I didn't have enough time to cook a casserole and everyone was ready for dinner, hungry and waiting on me.

Easy-peasy and not a lot of clean up!  Just the way I like it :)

Healthy Zucchini & Meatball Pizza Bites


Do you guys ever get a craving for pizza?  I sure do.  Since I've been on a weight loss journey and have lost 50 lbs to date I have been trying to come up with creative ways to make the foods I love a little healthier so that I don't go crazy and eat something that isn't good for me.

Today it was pizza.  My craving for pizza was so bad that there really wasn't any way I was going to get around it.  My options were to either go and get a pizza from our local pizza shop and just eat 1, 2 or 5 pieces.  Or I could make something that was healthier.  So glad I love my new body because it really wasn't even a question as to what I was going to do.

I am a recently married gal who loves to cook, bake and decorate. I love trying out new recipes, especially desserts and snacks. I am a chocolate lover at heart, and so I always try to find healthier options to my sweet cravings. These chocolate energy bites are absolutely my favourite. Packed with all things good for you, both you and your kids will just love eating these when a boost of energy is needed. I take them to work for a little mid-afternoon "pick me up" snack. You can add and/or omit whatever you would like. With the ingredients below, these balls work out to about 100 calories per ball. I also added some ideas for variations, just to get you inspired to make some today! Enjoy!

Guest Post: Spicy Roast Potatoes

I want to share with you my lazy day, scrumptious and healthier spicy roast potatoes. They go with everything – from a full roast dinner to grilled fish, haloumi, bean-burgers, or even just by themselves.

This is a quick and easy dish to make – you just have to remember to put them in the oven 30 mins before supper. As for the ingredients – this recipe combination is just one way. What goes in depends on what is in your pantry.

Coconut Rolo Peanut Butter Krispy Treats


 
I haven't been making enough treats lately for my family.  Partly because I am way tempted to devour all of them myself but also because I have been cooking so many other foods that I just haven't really thought about sweets much.

So when I came across a picture for Scotcharoo Cups over at Lil Luna I thought my family would like them.  The only problem was that I didn't have any butterscotch in the house so I made mine coconut flavored.  Oh boy, watch out!  Between the peanut butter and coconut oil they are very delicious :)

Spicy Tomato & Mushroom Tilapia



Oh my goodness... my lunch yesterday was so delicious!

I knew I wanted to have Tilapia but I didn't know how to season it.  I had a ton of fresh mushrooms & cherry tomatoes and I just stood there looking at my ingredients until it finally hit me.

Does that happen to any of you?  You're hungry, you know what you want to use but you don't know the exact way you want to put it together?  My husband is always coming in the kitchen to ask me what I'm doing and usually I'm just standing there in deep thought, lol!

Well, my friends it paid off.  I really loved how easy and quick this Tilapia dish was to make and the flavor turned out really great! 

And it's a perfect dish if you're trying to eat healthy and lose weight!

Blogging 101: A Reverse Image Search Tutorial


 

Yesterday while I was searching for a Chicken & Mushroom recipe to make for dinner I came across a blog that had nothing but other bloggers photo's and recipes.  I couldn't believe it.  There were hundreds of them.

She used everything.  Blog photos.... entire recipes and even the directions.  Everything was copied and pasted directly from the original sites.

I started to wonder if my photos were being used without my permission but I didn't know what to do about it until I came across a Tutorial by Kevin & Amanda showing how to do a reverse search for your photos on the internet.

Amazing!  I was able to find out every site where my photos are being used.

Slow Cooker Beef Stew



So today I'm guest posting over at The Shaffer Sisters which I am really excited about!  They are having a comfort food themed link party that is going on right now and they asked me to make something yummy and delicious to share with their readers :)

After some thought I decided to make a super easy Slow Cooker Beef Stew to share with them.  It actually worked out perfect because the day that I ended up making it we didn't get home until after 7 pm and it was all ready to eat and the house smelled delicious when we walked in!

Vanilla Pudding Muddy Buddies



Do I have a treat for you today :)

Not only have I made Muddy Buddies... I have made super yummy fantastic Muddy Buddies with a few super special secret ingredients!   

Who got creative in the kitchen?  I got creative in the kitchen!  

I did do my homework though, and no matter what kind of Muddy Buddy's I tried to look up I kept coming across The Recipe Critic's "Skinny Muddy Buddies" recipe.  I ended up improvising and tweaking her original recipe a little.  I cut out half of the butter and added some coconut oil to my muddy buddies mixture and they turned out so fabulous! 

Don't you just LOVE muddy buddies!
